ITALIAN COOKING LESSON PLAN

1. The Perfect Soffrito

Soffritto is, for Italians, the holy trinity of Italian cuisine. In this lesson, you will learn how to prepare and cook a perfect Italian soffritto. Used commonly when creating soups, sauces, stews, or braises, it include onions, celery, and carrots in a 2:1:1 ratio. Soffritto is the Italian word for “under-fried” or “fried slowly” and perfectly describes the process of gently cooking vegetables in oil to soften them and release their flavour.

2. Fresh Tomato Sauce

After learning how to prepare soffritto, you will learn how to use it with the most famous Italian sauce: tomato sauce.

3. Spaghetti with Fresh Tomato Sauce and Basil

In this lesson you will learn how to use soffritto and tomato sauce to prepare and cook a typical Italian pasta: spaghetti with fresh tomato sauce and basil.

4. The Original Pesto Sauce

Learn how to make pesto for use as a sauce or dip. This Italian condiment adds a burst of fresh flavor to any dish and it's perfect with pasta! Pesto is an essential condiment traditionally made from fresh basil leaves, ripened Pecorino Romano cheese, Parmigiano cheese, garlic, pine nuts and a good quality extra virgin olive oil.

5. Spaghetti Carbonara
