Breakfast Tacos

Shake up your breakfast routine with this delicious, easy and nourishing recipe.

Ingredients

  • 8 small tortillas
  • 8 large eggs
  • 2 avocados, sliced
  • Red salsa
  • Parmesan cheese

Refried beans

  • 2 tablespoons butter 
  • 1 small white onion, peeled and diced
  • 2 cans Pinto beans
  • ½ cup vegetable stock
  • 1 tsp chilli powder
  • 1 tsp ground cumin
  • ½ tsp dried oregano

Method

  • Make the refried beans by heating some oil in your Jean Patrique 20cm Saucepan + Lid. Cook the onions until soft.
  • Add all the remaining ingredients and allow to simmer. Once the beans are soft, mash to your desired consistency.
  • Heat some butter in your Whatever Pan and scramble your eggs. Feel free to add herbs and seasonings of your choice.
  • Assemble the tacos by spreading some refried beans onto the tortillas. Fill it with the egg, avocado, red salsa and Parmesan cheese.
  • Serve and enjoy!
