One-Pan Creamy Massaman Salmon Curry

A quick and easy Thai-styled curried.

Ingredients

  • 1 tbsp peanut oil
  • 4 salmon fillets
  • 3 tbsp Massaman curry paste
  • 1 cinnamon stick
  • 5 cardamom pods, crushed
  • 1 star anise
  • 400ml coconut cream
  • 2 fresh kaffir lime leaves
  • 2 tsp fish sauce
  • 1 cup fresh basil leaves
  • Sliced fresh red chilli
  • Cooked jasmine rice, to serve

Method

  • Pour the oil into your Whatever Pan and cook the salmon for 1-2 mins until golden. Transfer to a plate.
  • Add the Massaman curry paste to your pan. Cook for 1-2 mins until aromatic.
  • Add the cinnamon, cardamom, and star anise the stir for 30 seconds to bring out the fragrance. 
  • Stir in the coconut cream and lime leaves. Simmer for 10 mins.
  • Pour in the fish sauce then return the salmon to the pan until the fish is warmed through.
  • Add the basil and chillies. 
  • Serve with rice and enjoy!
