Ingredients
- 3 large eggs
- 150ml/5.1fl oz. double cream
- 200ml/6.8fl oz. milk
- 2 tbsp maple syrup
- 2 tsp vanilla extract
- 200g/0.4lbs blueberries
- 8 brioche slices (cut into chunks)
- 50g/0.1lbs pecan halves
- 6-8 rashers of bacon
- icing sugar, for dusting
Method
- Whisk together your eggs, milk, cream and vanilla extract in a large bowl.
- In your Whatever Pan, add two-thirds of the blueberries.
- Dip your brioche chunks into the egg mixture then arrange them into your Whatever Pan. Pour the remaining mixture over the top and scatter the leftover blueberries.
- Cover with cling film and let it chill in the fridge for at least 1 hour.
- Once it has been chilled, preheat the oven to 180°C/360°F.
- Scatter the pecans over the brioches pieces.
- Bake for 25 minutes or until the blueberries start to burst.
- Cook the bacon to your liking then sprinkle over the baked brioche.
- Dust it with some icing sugar and it is ready to be served. Eat as is or with some maple syrup.
