Brown Sugar Cinnamon Apple Skillet Cake

If you love apples and you’re looking for something to bake with them – try this cake! It’s definitely different than your standard apple pie, as it has a cake for base with no need to make a crust, but it has the same flavours. Baking it all in a skillet gives the cake some rustic and delicious elegance.

Ingredients

  • 1/2 cup unsalted butter, at room temperature
  • 2/3 cup brown sugar
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup buttermilk
  • 2 large apples, sliced thinly
  • 1 tbsp cinnamon sugar (mixture of cinnamon and sugar)

Method

  • Preheat the oven to 200°C and grease the skillet with butter.
  • In a bowl add brown sugar and unsalted butter and mix thoroughly with an electric mixer for 2-3 minutes until light and fluffy.
  • Add vanilla extract, egg and continue to beat until smooth.
  • In another bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt.
  • With the mixer on low speed alternate adding the flour mixture and the buttermilk. Mix until just combined and transfer the batter into the buttered pan. Use a spatula to evenly distribute the batter.
  • Cut apples into thin slices and arrange them on top of the apples in concentric, overlapping circles that look like a flower.
  • Keep adding the apple until the entire skillet is covered, then sprinkle with cinnamon sugar.
  • Bake for 20 minutes or until the edges are golden brown. 
  • Serve warm with a side of custard or ice cream if desired.
