Lamb Koftas with Yoghurt Dressing

These easy Lamb Koftas are so quick to make and perfect for the grill or barbecue. The perfect taste of summer holidays!

Ingredients

For the lamb koftas

  • 8 skewers
  • 500g/1 lb lamb mince
  • ½ onion, chopped
  • ¼ cup breadcrumbs 
  • 2 cloves garlic, crushed
  • 2 tbsp chopped fresh coriander
  • 2 tsp cumin
  • 2 tsp coriander powder
  • 2 tsp paprika
  • 1.5 tsp ground cinnamon
  • 1 tsp cayenne pepper
  • ½ tsp black pepper
  • Salt
  • Olive oil

For the yoghurt dressing

  • 1 cup Greek yoghurt
  • 1 tbsp extra virgin olive oil 
  • 1 garlic clove, crushed
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 1 tbsp fresh lemon juice

To serve

  • 8 small flatbreads, warmed 
  • Shredded red cabbage
  • Shredded carrot

Method

  • In a large bowl combine the mince meat, onion, breadcrumbs, garlic, coriander, cumin, coriander powder, paprika, cinnamon, cayenne pepper, black pepper and salt.
  • Create 8 Koftas by grabbing a handful of the mix and moulding it into a long, oval shape around the skewers.
  • Heat olive oil in your Whatever Pan and grill the Koftas for 3-4 minutes on each side. Don’t turn until they are well sealed or the meat sticks to the Whatever Pan.
  • For the yoghurt dressing simply mix together the greek yoghurt, extra virgin olive oil, garlic, cumin, salt, pepper and lemon juice.
  • Serve in a flatbread with shredded red cabbage and carrots, drizzle with the yoghurt dressing and serve!
