Egg Veggie Scramble


  • ½ tbsp. Olive oil
  • ¼ cup chopped onion
  • ¼ cup chopped tomatoes
  • ½ cup red peppers
  • Small handful baby spinach
  • 4 beaten eggs


  • In a pan, heat up olive oil; add the chopped onion, chopped tomatoes, chopped red pepper and a handful of baby spinach.
  • Stir, cover your pan with the lid and let cook until onions are transparent.
  • Add your beaten eggs to the vegetables. Keep stirring and cook until eggs are set.
  • Serve immediately and enjoy!
