Spiced Squash and Broccoli Stew

Ingredients

• 1 tbsp. ground cumin

• 1 tbsp. ground coriander

• 1 ½ tsp. smoked paprika

• 1 tbsp. coconut oil

• 1 chopped onion

• 1 small butternut squash

• ½ tsp. chillies

• 2 tsp. thyme

• 1L chicken broth

• 6 oz frozen broccoli

• 8 oz canned beans

• Juice of 1 lemon

• Salt & pepper to taste

• Bunch of fresh parsley

• 100g feta cheese

Instructions

• In a saucepan, add cumin, coriander and paprika and warm up for 1 minute.

 Add coconut oil, mix well, add the onion and fry for 5 minutes.

• Add the butternut squash, chillies, thyme, chicken broth, cover and cook for 20 minutes.

• Add the broccoli, beans, lemon juice and salt and pepper to taste.

• Cook for an additional 10 minutes, sprinkle some feta cheese and parsley and serve!
